Parenting Tip: Breakfast For Dinner

One recipe I love is called Egg in a Basket, or as some call it, a Nest Egg. I’m not giving away any secrets here, but it is one my family has made for years. The ingredients are simple: an egg and bread, salt and pepper and butter. It’s really all about the presentation with this one and your little one may enjoy pulling out the center of the slice of bread.

I was shocked when I saw this egg dish on a recent cover of the Food Network magazine.

THE RECIPE

-Butter a frying pan (keep it on medium heat, so the bread doesn’t burn)

-Once the butter has melted, remove a small circle out of the bread and add the slice to the pan.

-Crack the egg in the center of the bread, salt and pepper. Cook for about two minutes so the egg firms up a bit.

-If you prefer the egg as in the image above, skip this step. Otherwise, flip the egg and bread, cook on that side for another two minutes. Enjoy!
