Growing up in Boston, Massachusetts, one thing I remember during my teenage years was driving by my local Boston Market for lunch and/or dinner meals with my friends. As we gathered at the restaurant we would chat about school and our journey over tender and juicy rotisserie chicken servings paired with two hearty sides, such as their cheesy macaroni and string beans! Now as a mom, and a busy one at that – I often don’t have the time to cook right after work. When such dilemmas arise, I usually grab my son and we take a ride to our local Boston Market (which is across the street!) My son Kannon is such a fan of Boston Market’s rotisserie chicken that often the kids size serving is not enough for him – and we are talking about a 5 year-old!

To celebrate National Rotisserie Chicken Day, I will skip the kitchen and head over to Boston Market for dinner!
