Tripe Soup

This hearty, slow cooked soup is among one of the many traditional dishes you’ll find served in the Caribbean.

Ingredients

2 Tsp oil

1 cup diced onions

6 sprigs fresh thyme, divided

2 lbs cow tripe, cut up

Salt and pepper to taste

Water

1/2 cup yellow split peas, soaked overnight

1 lb. pumpkin (calabaza squash), cut into large chunks

2 lbs. green plantains, peeled and cut into 1-inch rounds

6 – 8 okra

Dumplings

Directions

1. Heat oil in pressure cooker.

2. Add onions and saute until translucent, 2 – 3 minutes

3. Add 3 sprigs of thyme and saute for 1 minute

4. Add tripe along with salt and pepper to taste and saute for 4 minutes.

5. Add 6 cups water, stir and cover pressure cook and let cook for 45 – 50 minutes. Time begins from the first whistle.

6. Add peas and enough water to make soup, cover pot and let pressure for 5 minutes. Time begins from the first whistle. Release pressure cooker valve to let out steam and open pressure cooker.

7. Add pumpkin, plantains and remaining thyme. Cook until plantains for almost melting. (Do not close pressure cooker at this stage, just rest the cover on top of the pot).

8. Add okra and dumplings to pot, cover and let cook for 6 – 8 minutes or until dumplings are cooked through.

9. Taste for seasoning and adjust if necessary. Stir and serve.
