Super Quick Meal: 5-Minute Breakfast Pita

Breakfast is the most important meal of the day because it sets you–and especially our kids–on the right track. We need nutrients in the morning to give us energy and get our brains working. You don’t want your kids slacking off in class because they can’t pay attention, oh no! With the rush of getting ourselves and our kids ready though, a full spread is usually not possible. Besides grabbing a yogurt or a sugar-laden muffin, eggs jazzed up with some potatoes is a great, healthy option. You can add whatever you usually put in your weekend eggs here like sautéed vegetables or seasonings, besides the diced potatoes that are maybe left over from a previous night’s dinner. Scoop the eggs into a pita (whole wheat is even better) and you’ve got an out-the-door meal. The younger kids can get one wrapped in a napkin, the older kids can have theirs wrapped in foil so they can pop it in their bag while they run for the bus, Presto! Sometimes all you can really manage in the morning is a handheld breakfast pita. Super Quick Meal: 5-Minute Breakfast Pita

Ingredients

1 pita bread, cut in half
2 eggs
salt and pepper to taste
1/2 cup cooked and diced potatoes

Directions
1. Preheat oven to 350 degrees F (175 degrees C). Place pita bread in oven to warm.
2. Heat a medium skillet over high heat. Coat with cooking spray. Add potatoes and saute until lightly browned, about 5 minutes. Reduce heat to medium and add eggs. Mix gently until eggs are firm, about 45 seconds. Season with salt and pepper. Remove pita from oven. Stuff pita with potato and egg mixture. Eat immediately.
