Ricotta Breakfast “Pizza”

This delicious breakfast idea is fast and doesn’t even require the stove. Creamy, protein-rich ricotta and tomato get you ready to start the day. Courtesy of Real Simple

Ingredients
Crusty bread of your choice
3 tbs low-fat ricotta
tomato slices
olive oil
salt, pepper

Take a slice of crusty bread, spread it with 3 tablespoons of low-fat ricotta, and add tomatoes. Finish with a drizzle of olive oil (about 1 teaspoon) and a little salt and pepper. Broiling is optional.
