Raspberry Coconut Cream Sherbert

The creaminess of this dessert is defined by cream of coconut, an often forgotten “sister” to coconut milk. This nearly vegan recipe can easily be made vegan by substituting the egg whites with 1 tablespoon of  plain agar powder that has been dissolved in 1 tablespoon of water. Whip the agar and white mixture, then chill, then whip again.
