Make lunch special with an easy-to-make version of the Vietnamese sandwich popping up everywhere. Ham slices get a makeover with unusual toppings for a simple banh mi. Courtesy of Real Simple.

1/2 Kirby cucumber, cut into thin strips
1/4 carrot, cut into thin strips
1/4 cup cilantro leaves
1/2 jalapeño pepper, seeded and sliced
1 tablespoon lime juice
1 tablespoon olive oil
kosher salt and black pepper
1 Portuguese sandwich roll, split
2 ounces thinly sliced ham

In a small bowl, combine the cucumber, carrot, cilantro, jalapeño, lime juice, olive oil, and a pinch each salt and pepper.
Form a sandwich
