Lunch Box @ Noon: Curry Chicken Salad

Give your chicken salad the kick it needs. A little curry powder goes a long way and crisp green apples are a nice contrast. Serve the chicken salad on wheat bread, a pita, or on top of some fresh greens.


3 cooked skinless, boneless chicken breast halves, chopped
3 stalks celery, chopped
1/4 cup low-fat mayonnaise
1/2 cup chopped green apple
2 teaspoons yellow curry powder
1/4 teaspoon paprika

Combine all ingredients in a bowl and mix well.
