Pear Bread Pudding
Serves 4 | Hands-On Time: 25 min. | Total Time: 1 hr. 10 min.
2 cups whole milk
½ cup sugar
3 teaspoons unsalted butter
¼ teaspoon salt
5 slices soft whole-wheat bread, each cut in half
2 pears, peeled, cored, and cut into eighths
1 teaspoon ground cinnamon
¼ pound thinly sliced cheddar cheese
1. Preheat oven to 375°F
2. Butter 9-inch square pan
3. In a saucepan, heat milk, sugar, butter, and salt until small bubbles form. In a bowl, whisk together eggs, then add warm milk mixture in slow stream.
4. Layer square pan with bread. Top with pears. Pour milk-egg mixture into baking pan and sprinkle with cinnamon.
5. Bake until golden (about 35 minutes). Top with cheddar, if desired, and bake until cheese is melted (5-10 minutes). Serve warm.
