The world seems to be catching onto the fact that a lot of people cannot digest dairy and lactose. Open a menu in many posh and trendy restaurants today, and you’ll find little characters indicating which items are dairy-free. Many school lunch programs now offer dairy-free programs too, which is quite a change from the days when every school lunch automatically came with a large glass of milk. But food intolerances are more complicated than just having to live dairy-free or lactose-free. Many individuals are cutting out any product that comes from a cow, when maybe they don’t have to. Meanwhile others are accidentally ingesting things, just because they haven’t quite pinned down what their food issue is. What exactly is lactose intolerance?

In order to digest lactose, your body needs lactase, an intestinal enzyme that can break down lactose. Some bodies don’t produce enough lactase, and when their intake of lactose is greater than their reserves of lactase, they experience digestive discomfort in the form of bloating, gas, and diarrhea.
