Baked Apples With Oatmeal Filling (Vegetarian)

They say an apple a day keeps the doctor away. Well, consider this the remix. Apples are already rich in phytonutrients like vitamin A and E, which are natural conditioners for a healthy scalp and help prevent sun damage. Add nutrient-rich oatmeal — which promotes hair growth — into the mix and you’ve got a killer combo.

4 large apples
1 cup rolled oats
1/2 cup unsweetened applesauce
2 tablespoons honey
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
1 teaspoon lemon zest (optional)

Preparation: 4 servings
Preheat the oven to 350°F. Core and slightly hollow out each apple with a spoon, making sure to leave the bottom of the apples intact so you’ll have a well for the filling. Place the cored apples on a pie pan.

In a medium bowl, combine the oats, applesauce, honey, vanilla extract, cinnamon, pumpkin pie spice and optional lemon zest. Fill and top each apple with the oat mixture.

Bake for 40 minutes, or until the sides of the apples are soft and easily pierced with a knife. Then, voila you’re ready to enjoy this tasty and nutritious treat.
