Dreamy Baked Coconut Chicken
It’s good to mix things up from time to time as you don’t want to serve the same old thing. Nothing screams come on to this table and eat quite like a delicious chicken recipe. Here’s one you have to try.
Baked Coconut Chicken
6-8 boneless chicken thighs
12 or 13.5 oz canned coconut milk (mix well before using, it separates)
1-1/2 tablespoons brown sugar
1/2 teaspoonspoon ground ginger
1/2 tablespoon ground oregano
1/2 tablespoon ground basil
1/4 teaspoon ground cumin
Salt and pepper to taste
1. Preheat oven to 425 degrees F.
2. In a small bowl, whisk all the ingredients (except the chicken) together. Place chicken in a baking dish. Pour the coconut mixture over the chicken until well coated. Cover with aluminum foil and bake in the oven for 10 minutes.
3. Remove aluminum foil and bake for an additional 20-25 minutes, until chicken is cooked.
