Fancy Eats: Not Your Average Chicken Salad

Need a refreshing meal that is just as good hours later and takes little to no cook time? Chicken Salad is a a go-to in the warmer months! In this recipe we add a little sweetness with honey, a little bite with apple cider vinegar, poppy seeds and toasted pecans. This isn’t you’re traditional Chicken Salad and will easily beat any store bought mix! Plus it only takes 20-30 minutes and can feed a family of 6 to 8 (did someone say leftovers?). Save a few bucks this week,  instead of eating out for lunch have a little fun with this recipe. After it’s all done, grab a whole wheat wrap or even better a croissant (although a few more calories) and make the quickest and best Chicken Salad Sandwich!

INGREDIENTS

For the Dressing:
1 cup Mayo
4 teaspoons Apple Cider Vinegar
6 teaspoons Honey
1 teaspoon Poppy Seeds
Salt and Black Pepper, to taste
For the Salad:
1 small Rotisserie Chicken, shredded in to bite size pieces {approx. 4 cups}
2 oz Pecans, lightly toasted then coarsely chopped
1 cup small Red Grapes {halved if large}
2 Celery Stalks {with leaves}, chopped small

 

DIRECTIONS:
Measure and mix dressing ingredients, taste and adjust seasoning if needed. Set aside.

Combine salad ingredients, then pour the dressing over top. Toss and refrigerate for at least an hour before serving.

Serve this salad on a buttery croissant or on a bed of romaine lettuce leaves!

*To toast pecans; place in a dry pan over medium heat, tossing occasionally until fragrant.
