Marcus Samuelsson Talks About His New Restaurant Venture

Marcus Samuelsson has lived his dream. He is not only one of the most well known names in the culinary industry but he is also one of the most adored chefs in the world. If you don’t know him by now, you’ve probably never watched Top Chef, perused the cookbook aisle of the bookstore, turned on the Food Channel, or even opened up any glossy magazine in the last few years. Known for culinary work with Scandinavian cuisine, the Ethiopian-born chef and cookbook author has recently opened a restaurant in his Harlem neighborhood called Red Rooster. We talked to Samuelsson about the essence and approach to his new establishment.

    I went to the Red Rooster last night around 6:15. The ambience & crowd was VERY nice. What WASN'T nice was the fact that only 5 of the many tables had guests while EVERYBODY else was made to wait in the front. When my friend & I made our way to the hostess they were in a flurry and told us there was a 1hr 45 min wait. I asked why since so many table were EMPTY!!! She replied that dinner was by reservation only. The amount of ppl that were waiting would have filled the entire dining area.

    I was a little disappointed b/c I thought restaurants gave a 15min grace period for reservations. *Shrugs* This kind of turned me off from the restaurant and we ended up eating on 77th & were seated immediately. A lot of folks were upset as well and left. So….. I think they should have a first come first served policy. Just a thought :)

      The way restaurant seating works is although it may look empty to you- the reservations may be coming in within 15 mins to 1 hr. so those tables can not be occupied (typically people sit for 1.5 to 2 hrs so if a walk comes in at 6 and there is a reservation at 7:30 you can't sit because it would cause delays with the reservation. I went to the restaurant at 5:25pm and there was 5 walk in people ahead of me and dinner wasn't starting until 5:30! Should I fault the restaurant or the people that made reservations and walked before me? I stayed had drinks (they gave a free cup of warm sweet wine!) at the bar ordered a few apps then had dinner which was wonderful!

      I would suggest try again. Glad it's here! I live in the neighborhood!!
